Transport Yourself to Warmer Days with…PIZZA?

Berry PizzaOh, how I long for warmer days right now! I just returned yesterday from a long weekend in Northern Wisconsin — the scenery was absolutely GORGEOUS but how my body is tired of shivering! So today, I thought I’d feature a recipe with a name that sounds as dreamy as the final product tastes!

This recipe for Summer Berry Pizza comes to us from Mary of South Carolina. How fitting that such a decadent creation with scrumptious berries would come from a place with near perfect temperatures.

Summer Berry Pizza – Ingredients:

4 Hass Avocados
Juice of one lime
1 teaspoon coconut extract
1/2 cup confectioner’s sugar
1/2 cup whipping cream
1 thin refrigerated 12-inch pizza crust
2 teaspoons extra virgin olive oil
1 tablespoon sugar
1 teaspoon cinnamon
2 cups mixed berries (raspberries, blackberries, strawberries)
1 cup diced plums or peaches
1/4 cup coconut flakes

Directions:

1. Combine avocado pulp, lime juice, coconut extract, confectioner’s sugar and whipping cream in a blender or food processor. Blend until smooth. Refrigerate until ready to assemble pizza.
2. Brush refrigerated pizza crust with olive oil. Combine granulated sugar and cinnamon and sprinkle over crust. Bake following package directions.
3. Remove from oven and cool completely. When ready to serve, spread avocado mixture over baked and cooled crust. Top with fruit and sprinkle with coconut. Slice and serve.
